The quick answer to your question about pickled onions: it varies. When I'm in a rush and haven't planned in advance (most of the time), I just sprinkle some red onions with balsamic vinegar and a little salt for about 15 minutes. When I've planned ahead, I sometimes have these (http://www.davidlebovitz.com/2008/09/pickled-red-onions/) or these (http://www.foodinjars.com/2010/03/can-jam-sweet-and-sour-pickled-red-onions/) in the refrigerator, and I like them, too
